Zucchini and Carrot Muffins

Is it healthy to eat carrot muffins? No, if they are bought in the supermarket or in any traditional bakery. Despite having carrots and possibly nuts, they are loaded with sugar, oil, white flour, eggs, cream cheese, dyes, additives and preservatives. Therefore, several of those ingredients are not healthy at all.

And what would happen if you prepare my recipe at home? The difference could be from heaven to earth.

The ingredients of this recipe favor the formation of red blood cells due to their iron and copper content, preventing anemia and arteriosclerosis.

Mathematically: 100g (one cup) of oats provide 4.7mg of iron, which exceeds the contents in meat, which is around 3mg. My recipe has 3 cups so more likely we will have 14.1 mg. of iron.

Also, sprouted oats help reduce total cholesterol levels, prevent high blood pressure, and stabilize blood sugar levels. And with sprouted gluten free oats, the phytic acid is reduced.

DRY INGREDIENTS:

•3 cups gluten-free organic sprouted oats (Costco sells them)

•1 teaspoon of baking soda

•1 teaspoon of royal powder

•1 teaspoon of cinnamon

•1/2 teaspoon of nutmeg

• Zest of a large green or yellow lemon

•4 oz Brazil nuts

•4 oz walnuts

WET INGREDIENTS:

•2 cups of carrots grated in a mini-processor

•1 cup of zucchini grated in a mini-processor (only one zucchini medium size). Extract 80% of the sum of the zucchini with a cloth . This sumo is delicious, drink it.

HEALTHY AREQUIPE INGREDIENTS:

•1 cup of dried fruit such as dates, 2 figs and 7 plums

•1 spoon of vanilla

•6 oz of cashews soaked in hot water for at least 2 hours

•6 oz of water

PREPARATION:

Step 1:

Grind (I use a coffee grinder exclusively for my ingredients) you grind the oats coarse to cook deeply.

If you grind it fine (floury), it will take longer to cook.

In a large bowl, place the ground oats and start adding the other dry ingredients, excluding the nuts. And start mixing them carefully.

Step 2:

Grate the carrots (use a mini-processor) to complete 16 ounces or two cups.. And add it to the dry ingredients.

Then, grate the zucchini in the mini-processor and remove the liquid and measure the cups of zucchini to add it to the dry ingredients.

Now stir everything carefully.

Step 3:

Prepare the arequipe.

To make the arequipe, the cashews must be washed very well. (These are placed in a strainer and a container below)

Flush with water. This process continues until the water runs crystal clear after about 5 or 6 rinses.

In the photo you can see 1 cup of mixed dry fruit. Then all the ingredients (cashews, dry fruit and vanilla) are placed in a powerful blender (vitamix) and blend for 4 minutes until it is creamy and there are no lumps.

Some of the arequipe remains in the blender, so you can add 2 to 3 oz of water to extract the rest of the arequipe and add it to the bowl of all the ingredients and stir one more time..

Step 4:

Cut the two types of nuts, the walnuts are placed inside a plastic bag and gently tapped with a kitchen hammer so that they do not fall apart. And Brazil nuts can be cut tiny with a knife.

Then, add the cut nuts in the original container and mix it all completely. You are ready to use either a silicone loaf bread or a silicone muffin pan for baking.

Step 5:

It’s time to preheat the oven to 350 degrees F. preferably in a convection oven.

Place this mixture in a silicone mold (advantage, you don’t have to grease it). If you want a carrot cake, use a rectangular silicone loaf bread (measures 10.5 inches long, 5.5 inches wide, and 3 inches deep.

Or use a silicone muffin pan. You will get 18.

Sometimes I make the loaf bread and 6 muffins.

Wait for the mold to cool down and enjoy your carrot cake or muffins.

Time in the oven is 55 minutes for the carrot cake or 25 minutes for 18 muffins and to make sure that they are already cooked, place a knife and if it comes out clean, they are ready.
