Vegan Gluten Free Macaroni and Cheese

Let’s make a healthy vegan, gluten-free macaroni and cheese

Traditionally, mac and cheese is high in saturated fat and sodium due to the amount of butter, cheese, and milk it contains, which makes it a relatively unhealthy dish.

This means it is also likely to be very calorific as fats are calorie dense.

Let’s switch to a nutrient-dense vegan gluten free mac and cheese that is loaded with vitamins, minerals, fiber and healthy fats. 

 Ingredients for the cheese sauce:

  • ¾ cup sweet potato (I buy it organic frozen)
  • ¾ cup butternut squash (I buy it organic frozen)
  • ½ cup raw cashews (soaked in hot water for at least one to two hours)
  • 1 tablespoon apple cider vinegar
  • 2 tablespoons nutritional yeast
  • ½ teaspoon sea salt
  • ¼ cup tahini
  • ¼ cup water

One box gluten free macaroni

Instructions:

Wash the cashews thoroughly until the water comes out crystalline and place all the ingredients in the Vitamix and voila the cheese sauce is ready to enjoy with a gluten free macaroni pasta.

Cook the pasta as directed in the package and add the sauce above.  It will make a very delicious macaroni and cheese dish.
