People with thyroid problems should not consume it, because it contains goitrogens, a substance that deprives the production of their hormones.
FETA CHEESE RECIPE (hopefully all organic)
1 tablespoon grated lemon
1.5 cups almond flour
2 to 3 tablespoons of chopped cilantro, rosemary and mint together
1 tablespoon of sea salt or salt from the Himalayas, if you want more salt, it is to taste
2 tablespoons nutritional yeast
14 oz extra firm tofu dewatered before mixing with dry ingredients.
4 teaspoons of agar agar powder
Juice of a 1.5 medium lemons. (about 3 tablespoons). (Tip, grate the lemons first and then extract the juice.)
5 tablespoons apple cider vinegar
In a container, mix the first five ingredients and then press the tofu or place it inside a cloth and extract the juice.
Add the tofu to the dry ingredients and stir well.
Immediately heat a small frying pan that does not stick and place this mixture and then add 4 teaspoons of agar agar and stir it with the stove on medium heat for 3 minutes.
Finally, you can place this mixture inside a cloth and try to get some liquid out of it. Immediately you tie it up and place it hanging from a bottle in the fridge for 12 hours.
The next day you will have your Feta cheese ready to enjoy it in salads or in vegetable dishes, legumes, black rice. Options are limitless.
