Granola: Fluffy and Healthy

INGREDIENTS

Enjoy your fluffy and healthy Granola.

Change the fruit and you will have a brand new version of healthy and fluffy granola

Dry Ingredients:

4 cups sprouted gluten free rolled oats

1 ½ cup raw nuts and/or seeds (I used 1 cup walnuts and ½ cup pumpkin seeds)

¾ to 1 teaspoon sea salt

½ teaspoon ground cinnamon

3 tablespoons of fiber

2 pinches nutmeg

If desired add after bake ⅔ cup dried cranberries (no sugar added), chopped if large (try without it, it is not needed)

Wet Ingredients:

2.5 tablespoons Tahini

2.5 raw almond butter

1 flaxseed meal egg (1 tablespoon to 2.5 water)

1 chia seeds egg (1 tablespoon to 2.5 water)

1 tablespoon vanilla extract

DIRECCTIONS:

In a large mixing bowl, combine sprouted the oats, walnuts, pumpkin seeds, salt, cinnamon, fiber and nutmeg. Stir to blend. Set on the side.

Seeds eggs preparation:

In another small container add 1 tablespoon of flaxseed meal to 2.5 tablespoons of water and mix well. AND PUT IN THE FRIDGE FOR 10 MINUTES

In another small container add 1 tablespoon of chia seeds to 2.5 tablespoons of water and mix well. Set aside

Use an 8oz cup and start adding all the wet ingredients and stir well.

Preheat oven to 350 degrees Fahrenheit and line a large, rimmed baking sheet with parchment paper.

Now this is the most important and time-consuming step

Please allow to mix the wet ingredients into the dry ingredients UNTIL EVERY SINGLE OAT AND NUT IS LIGHTLY COATED.

Pour the granola onto your prepared pan and use a large spoon to spread it in an even layer.

Bake until lightly golden, about 21 to 24 minutes, stirring halfway (for extra-clumpy granola, press the stirred granola down with your spatula to create a more even layer). The granola will further crisp up as it cools.

Let the granola cool completely, undisturbed (at least 45 minutes). Top with the dried fruit if desired.  In reality, try without the cranberries, you might like it without it.

Store the granola in an airtight container at room temperature for 1 to 2 weeks.

Recipe adapted from https://cookieandkate.com, my goal was to avoid oils and honey.  And I developed a new version of fluffy granola.
