Beet Cream Soup

Have you had a pure plant based beet cream soup that does not have any fat from the animal kingdom and yet it is so creamy, delicious, and nutritious? A cream soup that is loaded with lots of minerals such as potassium, iron, folate, magnesium, manganese, zinc, copper, and selelium?

Here are the ingredients: (all organic if possible)

4 beets regular size will probably make 2 cups.  Wash them well, keep skin, it is also healthy!

1 small yellow sweet onion

2 cups water

2 celery sticks

1-inch fresh ginger

Juice of half green lime

1 cup-soaked cashews

½ to 1 cup water, depending on desired consistency.

salt and pepper to taste

DIRECTIONS:

In a nonstick pan add water, cut beets, chopped onions and let it boil until beets are semi soft, about 7 to 10 minutes.

In the mean while wash the cashews that are being soaked for 3 hours with hot water, and be ready to add them to the blender with the celery sticks, ginger, lemon juice, salt and pepper.

Once the beets are semi soft liquefy all ingredients and it is ready to serve.
